Does anyone know what happens if we don’t take the last leg of our flight?We have a crazy long layover and it would be quicker to rent a car and drive home. We fly international so we would get our bags when we land in Houston anyways

Quicker, but how expensive? One-way rentals are often pricey. If its a one time thing, just call the airline and tell them you aren't continuing. Happened to us on another airline due to missing connection and winter weather had been a mess at connection airport so replacement flight could be a day or more away so just found a ride home the last 180 miles.
Make sure you tell a customer service agent! Other than that, they won’t really care. The problem comes in when you don’t tell them. I’ve done it a couple times.
